Winter grilling has grown more and more popular as a fun and casual way to entertain guests. Some consider it quite a challenge to brave February temperatures in order to cook outdoors. But many true grilling aficionados report that the most enjoyable time to grill is, indeed, in the winter when days are shorter and neighborhoods are quieter. Your neighbors might think you’re nuts. But rather than slave over a hot grill in the summer heat, why not warm your hands and enjoy a glass of wine or a mug of hot cider while roasting vegetables or grilling a steak to perfection on a crisp, cold patio this weekend?
Why cook on a grill?
Many true grilling aficionados report that the most enjoyable time to grill is, indeed, in the winter when days are shorter and neighborhoods are quieter. Grilling is so easy and flavorful, it’s no wonder so many of us love it so. Grilling brings out smoky flavors that a stovetop cannot achieve. And it’s a healthy alternative to cooking food in pans, because of the absence of cooking oils and because the saturated fat from the food drips away as it’s cooking. Grilling is practical for other reasons, too. It frees up the oven for other parts of the meal, and can minimize clean-up chores after dinner by saving the roasting pan or skillet from use. You can grill anything in winter than you can in summer. But the cold tends to make even the heartiest among us want to come inside after a short time. The best foods to grill in winter, then, are those that either cook quickly, require little attention, or both. Try seafood – here are a few recipes – which generally cooks within a few short minutes. Or try grilling in foil packs, which require little, if any, attention while cooking.
How to grill in winter
Year-round grillers will need to undertake a bit more planning and preparation than their seasonal counterparts. If you have a propane grill, you can fire it up at any time of year. Just be sure to check your propane tank ahead of time and see that it’s full. If you depend on (or just prefer) charcoal, stock up on briquettes in the autumn, as many retailers don’t hold much inventory between December and March. Don’t ever grill inside. Charcoal emits carbon monoxide. Incorrectly adjusted gas grills do, too. If your grill is way out back, bring it closer to the door during the winter months so you won’t have so far to walk in the cold temperatures (possibly on snow or ice). Also, try to protect your grill from the wind. Cold wind will bring the grill temperature down and force your grill to work harder (using up your gas or charcoal more quickly). And wind could blow out the flames on a gas grill, increasing the risk of explosive gas accumulating under the lid. Don’t ever grill inside. Charcoal emits carbon monoxide. Incorrectly adjusted gas grills do, too. And gas grills always present the risk of explosion. And of course all grills create fire, which you wouldn’t want to extend to your garage or other structure. Ensure adequate lighting. If your grill isn’t on a well-lit patio, use a headlamp, leaving your hands free for attending to the food. Dress appropriately. Choose shoes that will keep your feet warm but that you can get on and off easily as you go in and out of the house. Secure outerwear, tucking scarf ends in and keeping long sleeves away from food, hot surfaces and flames. Remember that your grill feels the cold, too, especially when you first fire it up. Allow extra time for the grill to heat up and don’t be surprised if food takes a little longer to cook. Keep the lid closed unless it’s absolutely necessary to open it. To really resist the temptation to open the lid and let the cold air in, try using a remote thermometer to keep an eye on your food’s internal temperature from the warmth of your kitchen. After dinner, ask your guests to bundle up and join you outside around the grill for s’mores and a warm drink. Bon appétit!
